醸造方法：収穫後、85%の完熟ブドウは新鮮なまま醸造されますが、残りの15%は約50日間アパッシメント（陰干し）されます。ソフトプレスの後、10℃の温度管理下で約2時間のマセレーションを行い、週に一度のバトナージュを行いながら、ステンレスタンクで60日間熟成。
